Daniel has been with Endeavour Tap Rooms since 2023 having worked in the cheese making & hospitality industry, and home brewing for years....

Bringing the perfect balance of science and artistry, Daniel took over as Head Brewer of ETR in January 2025.

Here's a little more about Daniel....

Daniel's brewing background

"I started home-brewing over 20 years ago with a friend who taught me the basics. We progressed from kit brewing to BIAB, and eventually invested in a 15-gallon, three-vessel RIMS setup with unitanks and glycol. What started as a hobby quickly became a passion, and I realised making beer for a living would be a dream come true!

In 2015, I completed the Online Concise Course of Brewing Technology with the Siebel Institute and gained hands-on experience volunteering at breweries like Moondog, Kaiju, Mildura Brewery, and NOMAD Brewing Co.

In 2023, I officially joined the industry as Assistant Brewer at Endeavour Tap Rooms. I’ve recently completed The Science of Brewing at KU Leuven and plan to pursue additional qualifications, including the General Certificate of Brewing and the IBD Diploma, to keep building my expertise."

"While I love a super-hoppy, crystal-clear West Coast IPA, I can’t resist a good saison. On a hot day, its high carbonation, spicy hops, and amazing yeast flavour and aroma are pure bliss!"

Who would you love to do a collaboration with

"Sailors Grave Brewing are incredible—they’re all about experimenting with unique and native ingredients. I’d love to collaborate with them someday and see what we could create together while learning from their innovative approach."

Your Hobbies & Interests

"Cooking, pottery, and attempting to keep up with little Tia, a Whippet X Kelpie, in agility."

"Nicolas Cage - With his energy how would that not be amazing. Plus, he’s the best actor ever, obviously.

Bjork - She’d probably describe the hops like a symphony and turn drinking into a magical, musical experience.

Brian Cox - To have my mind blown with everything he says.

Gillian Anderson - Just to live out my teenage fantasy of one day meeting Scully.
